What do you do with 3 ripe bananas? You make a Banana Chocolate Chip Snack Cake.
This snack cake is light and moist, and to get the best banana flavor, make sure your bananas are really ripe. And, what goes with bananas? Chocolate, of course. So I added chocolate chips in the batter, and then on top. Bananas and chocolate in every bite.

INGREDIENTS:
1/3 cup butter, softened
1-2/3 cups sugar
3 bananas, mashed
1/3 cup nonfat plain yogurt
3 large eggs, slightly beaten
2/3 cup buttermilk
1-2/3 cups unbleached flour
2/3 cup whole wheat pastry flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
11 ounces semisweet chocolate chips, divided
DIRECTIONS:
Preheat oven to 350 degrees F. Grease and flour 13″ x 9″ baking pan. In a large mixing bowl, cream together butter and sugar, until smooth; about 5 minutes.
In a medium bowl, mix together mashed bananas, yogurt, eggs, and buttermilk; until well blended. Set aside. In another medium bowl, whisk together flours, baking powder, baking soda, and salt. Mix in 3/4 cup chocolate chips into dry ingredients. Add banana mixture to creamed butter-sugar mixture; beating on medium speed until blended; about 30 seconds. Add dry ingredients, beat on medium speed until blended; about 3 minutes. Yes, the chocolate chips are getting mixed in too.
Pour batter into prepared baking pan, sprinkle 2/3 cup chocolate chips on the top. Bake at 350 degreesF. for 45-50 minutes, or until toothpick comes out clean (or the middle reaches 210 degrees F. on an instant read thermometer). Let cool completely, then serve.
