Mint Chocolate Chip Cookies

St. Patrick’s Day is coming, and I wanted to make something fun, festive and green.   So, I decided to make Mint Chocolate Chip Cookies, which is inspired by one of my favorite ice cream flavors, Mint Chocolate Chip Ice Cream.

These delicious cookies have a wonderful minty green color, a yummy minty flavor, and loaded with chocolate chips and Dove Mint & Dark Chocolate Swirl Promises.  All the flavors and colors of Mint Chocolate Chip Ice Cream in a cookie.

Mint Chocolate Chip Cookies are the perfect way to celebrate St. Patrick’s Day.

INGREDIENTS

1 cup butter, room temperature
1 cup caster sugar
1/2 cup firmly packed brown sugar
2 eggs
1 teaspoon peppermint extract
2 cups unbleached flour
1/3 cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
6 ounces semisweet chocolate chips (1 cup)
6 ounces Dove Mint-Dark Chocolate Promises (1 cup coarsely chopped)

DIRECTIONS

In a stand mixer, cream together butter, caster sugar and brown sugar on medium speed for 5 minutes, until light and fluffy.  Add eggs and peppermint; mix until thoroughly blended and creamy.  In a small bowl, whisk together both flours, baking soda, and salt.  Add flour mixture to butter-sugar mixture, blend completely on low speed.  Stir in chocolate chips and coarsely chopped Dove Promises.

Preheat oven to 375°F.   Drop on a parchment-lined baking sheet 2″ apart, using a #40 cookie scoop (disher), or 1-1/2 Tbsps.  Bake at 375°F for 9-11 minutes.  Remove cookies, with parchment, from baking sheet onto a cooling rack.  Let cool completely.
