One day after walking to our neighborhood Starbucks to enjoy a Morning Bun, I thought, why don’t I use my Scone Dough recipe and make Morning Bun Scones. So, instead of walking to Starbucks in the morning, we can just go for a walk, and an hour later we can enjoy fresh, out of the oven warm, homemade Morning Bun Scones.
They were a hit with my husband, so I’m sharing with you my recipe for Morning Bun Scones that are full of cinnamon, and simply delicious.

INGREDIENTS:
SCONES
8 tablespoons butter
1 3/4 cups unbleached flour
1/2 cup whole wheat pastry flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
FILLING
2 tablespoons butter, melted
1/4 cup light brown sugar
2 teaspoons cinnamon
COATING
1 tablespoon sugar
1 teaspoon cinnamon
DIRECTIONS:
SCONES
Preheat oven to 400 degree F. Grate butter and put in freezer.
Meanwhile, in a large bowl mix together flours, sugar, baking powder, baking soda, salt. Mix in frozen butter. Add buttermilk and mix until just together (do not overmix, the dough is very loose).
Place dough on a heavy floured board and pat into a square. Roll out into a 12″ square. Fold into thirds, and then fold into thirds the other direction (you should have a square again). Put on a floured plate and put into the freezer uncovered for 5 minutes.
FILLING
While dough is in freezer, mix together brown sugar and cinnamon, set aside. Roll dough into 12″ square. Brush on melted butter, cover entire dough. Sprinkle with the brown sugar-cinnamon mixture on dough and pat down gently.
Roll dough like a cinnamon roll, into a tight log. Cut log into 12 equal pieces.
COATING
Roll each piece in the sugar-cinnamon coating. Place each piece in a muffin tin cup. Bake at 400 degrees F. for 15-18 minutes (until golden brown and delicious).
Remove Morning Bun Scones from muffin tin; cool on cooling rack. Serve warm. Enjoy!
